Cinnamon Ornaments
Makes about 24 pieces  
Preparation time:  45 minutes
Drying time may take several days.

Ingredients
1 cup ground cinnamon
1 Tablespoon ground cloves
1 Tablespoon ground nutmeg
3/4 cup applesauce
2 Tablespoons white glue

Instructions
1. Assemble ingredients, a medium bowl, drying racks or cookie sheets, paper towels. rolling pin, work surface (I use a pastry cloth), cookie cutters, drinking straw, and spatula. You'll need thin ribbon for hanging.

2. In bowl, combine cinnamon, cloves, and nutmeg. Add applesauce and glue, stir to combine. Work mixture with hands for several minutes or until dough is smooth and ingredients are thoroughly mixed. Divide into 4 portions.
3. Sprinkle work surface with cocoa and rub cocoa on rolling pin. One at a time, roll each portion to about 1/4-inch thickness. Work scraps into the next portion.
4. Cut out shapes with the cookie cutters and punch a hole in each one with the end of the drinking
 straw for threading the ribbon.

5. Cover each drying rack with a paper towel. Transfer cutouts with spatula to racks or cookie sheets to dry at room temperature. Drying them too fast will cause them to warp.
6. When dry, thread ribbon to make a garland. 
Suggestions: Consider creating a theme with the cookie cutter shapes for the garland. These can also be used individually as package tags. You can write on them with royal icing.
